 Sun-Dried Tomato Balsamic Pesto Sauce
 
 
This one is too simple. Even simpler if you get a sun-dried tomato that is already chopped or pureed.
 
  Sun-dried tomatoes (in oil)  
  balsamic vinegar  
  extra virgin olive oil  
  salt & pepper  
 

Take a bit of the sundried tomatoes in the oil and puree in your food processor until somewhat smooth (the consistancy is your preference). Then whisk in a few dashes of balsamic vinegar. I eyeball this to about 1/4 the volume of tomato puree. Then whisk in about 1/2 the volume of extra virgin olive oil. Season to taste with salt and pepper.
