Chris Cosentino, Chef at Incanto Restaurant and Wine Bar in San Francisco and Boccalone Salumeria

Chris Cosentino is the Executive Chef at Incanto Restaurant and Wine Bar in San Francisco. Incanto is Italian for enchanted. Inspired by Italy's greatest poet, Dante Alighieri, who mused on love, logic, philosophy and literature. Italian is the style, California is the region utilizing local and fresh ingredients.

And if that weren't enough, just a year and a half ago, he and his business partner opened a Salumeria called Boccalone. Salumi is Italian for cured meats. And using old world recipes and techniques, Chris and his team produce a wide variety of Italian cured meats (think salami), cooked meats and sausages.

Oh did I mention, he also has tried and came up a bit short on The Next Iron Chef competition? Yeah, he was one of the finalists for the next Iron Chef.

So, he has a lot on his plate these days. And some of it you may not like looking at. Mosty because, the things that Chris is into are the so-called "nasty bits" from the butcher shop. To the novice, the term is "offal". Not to get too graphic, but offal is derived from the phrase "off fall" or the pieces that fall from the carcass during butchery.

We chatted with Chef Chris while he was setting up for a cooking demo at Bloomingdales in San Francisco. We touched on a few things like the Iron Chef thing, his love for competitive bike racing and all the culinary irons he has in the fire right now.
